I found this recipe on a website, but I don't remember where, exactly. I did kinda change it, a little, to suit my tastes, though. It's awesome. If you like curry or stir fry, you would probably like this.
1 1/2 lbs boneless chicken, cut into 1 inch cubes
Marinade:
1 cup plain yogurt (not greek)2 tbsp lemon juice
2 tsp ground cumin (freshly ground is best)
2 tsp ground red pepper
2 tsp black pepper
1 tsp cinnamon
1 tsp salt
1 x 1-inch piece ginger, minced
Sauce:
1 tbsp butter
2 cloves garlic, minced
1 jalapeno, minced (I omitted this, to cut down on the spiciness)
1 sweet onion (vidalia, maui, walla walla, etc), sliced into strips
2 tsp ground coriander
1 tsp ground cumin
1 tsp paprika
1 tsp garam masala (spice blend, available at Whole Foods, Cost Plus World Market, and some grocery stores. If you can't find it, look online for a recipe to make the blend yourself)1/2 tsp salt
1 8oz can tomato paste
1 cup whipping cream
1/4 cup chopped fresh cilantro.
Combine the ingredients for the marinade, add chicken and marinate 1 hour. Cook the chicken on a grill or in a grill pan until done, discard marinade. Set chicken aside.
Melt the butter in a pan. Add garlic and onion, cook until onion is translucent. Add spices, cook about 30 seconds to a minute before adding tomato paste. Stir in cream and add cooked chicken. Simmer about 5 minutes.
Serve over rice.
